Dutching is backing multiple selections in an event staking such that if any of the selections wins the profit on the event is the same.
The idea is that by having multiple selections your chance of winning is higher but you stake the shorter odds selections higher than the longshots to ensure that whichever one of your selections wins it covers the stakes for the losing bets plus generates a bit of profit

Race = 5 runners
Horse A = Evs
Horse B = 2/1
Horse C = 3/1
Horse 4 = 5/1
Horse 5 = 10/1
Dutch would be for example
£20 on Horse A
£10 on Horse B
Total winnings if Horse A wins = £10
Total winnings if Horse B wins = £10

the best thing to do is get yourself a dutching calculator, and have a little play. - i will send you a PM of the best around IMO.
note to mods: the calculator is from a now defunct racing site. but the calculator is still available, with premission i will post the link.

Probably the one I used to use before I paid for decent software.

i use the windows stable version, i think. - it is downloadable, and is a nice easy addition to your taskbar.

As long as it's not the one Vegy used to work out his dutch!
The stakes should be:
18 at Evens = £6 profit
12 at 2/1 = £6 profit
