How can you tell how much money has been matched/offered on a particular race on betfair?

go to rules, on the right hand side. - it should say the ammount matched here.

it's probably best waiting till tomorow and checking then :)
but off the top of my head i will say around £400k - i never actually look at this figure though. but as a general rule - the better the race the more matched.

So it is generally a bad idea to strike a bet the night before as the market has not evened out?

an average midweek race could see maybe £200 - £400k matched, more if it's a better quality race, less if banded. Big races can see a million + matched, even on Irish and other 'foreign' racing if the interest is there. Several million matched for instance on the Breeders cup races.

looking at the market's i would say that this wouldn't be a great idea.
the market book is around 125% / 95%
if i had to place a bet now, i would leave it as the best available to lay. it will probably get matched, as the lay side is 95%.
but the problem with this is, it could shorten, so the bet probably wouldn't get matched, drift so you would probably get a crap price. or hover around the price now.
it is best IMO to wait as late as possible as the cash sort's out the market, and the later you wait the more cash. - this way you will nearly always beat SP. if you play about trying for different odd's some time before the off. you are taking a risk weather the odd's shorten and the variences / % above / below SP will be far greater.

also for some reason betfair count a bet as double.
eg. a £10 bet comes up as £20 matched

I guess they see it like for example when you have a £10 bet with your mate, both of you produce the money on the table (total of £20 placed on the table), and the winner takes the lot
