Try Googling the file extension.
If your system doesn't know what to open the files with it means you don't have that file extension associated with an application which means it's something non-standard.
What are the files, if you don't mind me asking?

Mat just some mortgage info from a new broker i am tryingThe files should be called something like filename.ext, it's the .ext you want to Google.
If they don't have extensions (e.g. just filename, not filename.ext) then I'm not surprised you are struggling. If this is the case I suggest you e-mail the brokers back and ask for the files in a standard recognisable format.

I'd get in touch with the brokers and ask for the info in a standard format

Do you have Adobe Acrobat installed?
I usually check out whats in a file by opening it with Notepad or Wordpad.
Make sure you have un-ticked the 'always use the selected program to open this kind of file' if you do this.

As Matt explained, Windows associates certain filetypes with specific programs. It uses the filename extension (i.e., the three letter abbreviation that follows the period) - to see these extensions you need to open up a folder, click Tools, Folder Options, View, then uncheck the "Hide extensions for known filetypes" option
Windows will associate all files with the extension .pdf (page definition file) to the program Adobe Acrobat. The reason Acrobat didn't launch automatically is because the files you were sent were either missing the extensions (e.g. they were called file1, file2 instead of file1.pdf, file2.pdf) or the extensions were incorrect (e.g. file1.pfd, file2.pfd)
